Peach Fritters with Canned Peaches


1 cup all-purpose flour 2 tablespoons granulated sugar 1 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg


Drain and dice canned peaches. Prepare a simple batter by mixing flour, sugar, baking powder, salt, cinnamon, egg, milk, and vanilla extract. Gently fold diced peaches into the batter. Heat vegetable oil in a skillet


In a mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.


In another bowl, beat the egg, then add the milk and vanilla extract. Stir until combined.


Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. The batter should be thick but pourable.


Gently fold in the diced peaches until evenly distributed throughout the batter.


In a large skillet or frying pan, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C).
